I’ve wanted to make tortillas for a while, but when I purchased Tortilla Land tortillas the other week, I found myself amazed while cooking the tortilla (it really doesn’t take much to excite me). I knew then that homemade tortillas should be one of my new recipes to try in 2021.

Notes:

– It says to get the dough to a cornmeal consistency….I didn’t seem to experience that at all, but I feel I did successfully combined the lard into the flour mixture. I assume that was the objective of that statement.

– I ended up kneading a bit more than I expected but that seemed to be needed to get the right dough elasticity.

– I had a really hard time rolling the balls into a circle. I assume a tortilla press would make it much easier to get circles.

– The tortillas weren’t difficult to make, just a little time consuming.

– It was helpful to have one person flipping while the other person rolled.

– We also used two burners and two non stick pans to make the 24 tortillas faster.

– We kept them warm in the crockpot with a damp towel at the bottom, the crockpot on the “warm” setting, and with the lid on.

– The flavor was great! (I assume the lard has almost everything to do with that.)

– The texture was good but thicker than I wanted. We could still fill them with fixings and turn up the sides without it breaking or falling apart.

– We ate them as shrimp tacos; inspired by this recipe’s shrimp, slaw, and sauce.

I would make these again! However I have Tortilla Land tortillas sitting in my shopping cart right now. They bubble up even better, are thin and flavorful, faster to cook, and also include zero lard.
