Christmas Cookie Bars (Santa’s Peanut Butter Cookie Bars)
Merry Christmahanakwanzika and Happy Honda Days everyone! No matter what holiday you celebrate, it’s always better when celebrating with cookies! So that’s why I’m sharing my mother’s recipe for Santa’s Peanut Butter Cookie bars. You could also call them Christmas Cookie Bars… or re-name it whatever holiday you want. Point is, it’s festive AF!
As you know we like simple, easy recipes. And this is another one! So without any further ado, enjoy these Christmas Cookie Bars!
Christmas Cookie Bars
Equipment
- 9×13 pan
- Mixer
Ingredients
Mix
- 1 1/2 cup all purpose flour
- 1 cup old fashioned oats (not quick oats)
- 3/4 tsp baking soda
- 1/4 tsp salt
Cream Together
- 1/2 cup butter – softened (1 stick)
- 1/3 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
Add
- 1 tsp vanilla
- 1 large egg
- 1 large egg yolk
Toppings
- 1 cup mini chocolate chips -Mix in
- 1 cup M&M's -Spread out on top (see pic)
- 3 tbsp Christmas sprinkles -As you can see in the picture, we choose candy candy shaped sprinkles, but you can use whatever shape you want!
Instructions
- Mix together the first 4 ingredients, as per normal cookies
- Cream together the next 4 ingredients before mixing in
- Add the last 3 ingredients
- Mix in the mini chocolate chips to ensure even spreading
- Spread the batter out on the pan, and then spread the sprinkles and M&M's on top
- Bake at 350° for 14-16 minutes, or until edges are lightly browned
